Stuffed Bell Peppers



Another creation with Paige as we watch all of the Harry Potter movies before Deathly Hallows Part II is released!!! Again excuse the cell phone pictures my camera was trapped in my car and there was a monsoon outside :)

Ingredients

4 Bell Peppers
1lb of Ground Chuck, Lean Ground Beef, or Ground Turkey Breast
1/2 Onion, diced
2 cups of brown rice
Minced Garlic
1/4 cup of diced green onions
Garlic Salt, to taste
Taco Seasoning, to taste
2 cups of tomato sauce
2 cups of salsa, medium
Shredded Mexican Cheese for topping
Serving Suggestion: top with banana peppers

Preheat oven to 350 degrees
Begin by browning meat with minced garlic and taco seasoning.
*While meat is browning remove the tops of the bell peppers and and remove the insides.


When meat is lightly browned add onions, green onions, and some diced green pepper left over from the tops of the bell peppers, or if you do not wish to do this buy an extra pepper to add to the stuffing.


While veggies and meat are cooking together boil your bell peppers for 2-3 minutes to soften. When meat is fully cooked add salsa, tomato sauce, and garlic salt (to taste). Allow to simmer for 2-3 minutes. 

To sample your stuffing mixture top on bread for a little appetizer :)

Stuff bell peppers fully with mixture (brown rice and meat mixture) and then top with cheese. Place in a pan that has been lightly sauced with the leftover pasta sauce (we used one with mushrooms in it!)


Cook for 15 minutes, then if cheese has not fully melted broil on low for the remaining cooking time. Top with sauce that has cooked on the bottom of the pan and with your choice of additional toppings like banana peppers :)

Teriyaki Chicken

Ingredients:
2 boneless skinless chicken breast cut into bite size pieces
1/4 teriyaki
1/8 cup of soy sauce
Marinate chicken in sauce for an hour
Heat skillet with and add chicken and sauce and let cook with lid on stirring ever once in a while until chicken is no longer pick inside.
 Enjoy!

Stir Fry Veggies

5 whole carrots cut it half then quarters the halves to make then pinky size
2 zucchinis cut the same way as carrots
1 pack of sliced mushrooms
1 onion wedges
1 pack of thawed broccoli florets
1/4 cup teriyaki 
1/8-1/4 cup soy sauce

Add some extra virgin olive oil to a pan then add carrots and cook for about 2 minutes. Then add onions and a little soy sauce and teriyaki. After three minutes add mushrooms cook for 3 minutes and add zucchini and broccoli. Then add the rest of the sauces and let cook down for about 5 minutes or so until all vegetables cooked completely
 Yum, fell free to serve with Shrimp Sauce

Fried Rice

Ingredients:
2 cups of dry rice, cook according to package
1 egg
1/2 cup of carrots diced
1/2 cup of diced onion
1/2 peas
1/8 cup of teriyaki sauce
1/8 cup of low sodium soy sauce
Add cooked rice to a bowl
 Scramble egg and add to hot pan
 After scrambling add to bowl of rice
 In the same pan add extra virgin olive oil, then add carrots and onions
 Then add 1/2 of teriyaki and soy sauce. Cook until carrots are soft.
 Then add thawed peas and cook until heated about 2 minutes
 In a non stick pan or wok add rice and veggies and stir add the rest of the sauces and heat thoroughly. But make sure that the rice does not burn. 
 The rice should be evenly coated with no white spots
 Serve with shrimp sauce

Shrimp Sauce

Ingredients:
1 1/4 cup mayo (Hellman's)

1/4 cup water
1 tsp tomato paste
1 tbsp melted butter
1/2 tsp garlic powder
1/2 tsp sugar
1/4 tsp paprika
Dash of cayenne pepper
Add all ingredients to a bowl
 Combine well and let chill at least 6 hours. Serve over fried rice or anything else you like.

Salty River Bars

These are nothing shy of amazing! The most amazing salty sweet combo it will not disappoint.


Line 8x8 with foil
 Now lay out club crakers
 In sauce pan melt butter and brown sugar until turns into caramel thick, and smooth. About 5 mintues
 Top crackers with 1/3 of chips
 Pour caramel over chips and repeat two more times and finish with crackers
 Melt chips in microwave on high stirring every 30 second until melted completely
 Pour over crackers evenly. Then refrigerate for 10 minutes then cut chocolate to make it easier to cut when chocolate has set completely 
 Top with coarse salt, cut, and ENJOY!!!

Pretzel Crusted Chicken

AKA Heavenly Chicken!
When I saw a recipe like this one I thought is was going to be GROSS, because it said baked chicken. I HATE baked chicken, 99.9% of the time it sucks the moisture out of your mouth. But, this was completely different it was the most amazing piece of chicken that has ever entered my mouth! It was moist, flavorful, and needless to say DELICIOUS!

Ingredients:
4-6 boneless skinless chicken breast cut in halves or you can make tenders out of them but cutting horizontal
1 large bag Snyder's honey mustard and onion pretzels
1 5.3oz plain nonfat yogurt
1/8 cup olive oil
1/4 cup honey mustard
2 tbsp red wine vinegar
1-2 tbsp spicy brown mustard
Salt and Pepper
Preheat oven to 400 degrees
 In a food processor add pretzels and coarsely crush.
 They should be fine with a few chunks
 Now add all "wet" ingredients, yogurt, mustard, olive oil, vinegar, and salt and pepper
 After mixing add to a bowl
 Dip chicken in mustard mix, then in pretzels, there is going to be a good layer of pretzels on the chicken, don't be scare!
 Bake for 20 minute or until cooked completely. I took mine out after 19 minutes and they were PERFECT!

Homemade Oreo's

Ingredients:
For the chocolate wafers:
1 1/4 cups all-purpose flour
1/2 cup unsweetened Dutch process cocoa
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cups sugar
1/2 cup plus 2 tablespoons (1 1/4 sticks) room-temperature, unsalted butter
1 large egg

For the filling:

1/4 cup (1/2 stick) room-temperature, unsalted butter
1/4 cup vegetable shortening
2 cups sifted confectioners’ sugar
2 teaspoons vanilla extract
Preheat oven to 375
Mix together all dry ingedients for wafers than on slowly beat in butter and eggs.
 Using a teaspoon scoop out dough and ball and press down just a little bit.
 Bake for 7 minutes and more to a cooling rack.
Mix together ingredients for filling 
 
 Put in a bag to easily distribute on each cookie
 Swirl on filling and top with another cook to complete the oreo
 Enjoy!

Krab Dip

Ingredients:
1 pkg of Imitation Krab Meat
2 pkg of 1/3 less fat cream cheese softened
1 stick of butter softened
1 bag cheddar cheese
1 bundle of green onions chopped
1 tsp of old bay add more if you like
salt, pepper, and garlic powder to taste

Preheat oven to 350
Mix together all ingredients excluding spices.
 Now add seasoning and add more to taste is you like.
 Spread in casserole dish
 Bake for 20 minutes. Then broil for 3 minutes to help brown the top. Serve with club crackers, flip sides of a spoon :).
