Sun-Dried Tomato Pesto Chicken

This is a simple and flavorful recipe for chicken. I made it with a side of penne and sauteed spinach.

Boneless Skinless Chicken Breast
Classico Sun-Dried Tomato Pesto Sauce
Olive Oil
Fresh Spinach
Garlic
Penne
Pasta Sauce

I started by splitting a chicken breast in half and coating with a layer of the sun-dried tomato pesto sauce. I then cooked it in olive oil. 


Cook evenly. Before removing from pan top with some additional sun-dried tomato pesto. Meanwhile, I sauteed fresh spinach with garlic.

Plate with a side of penne with light tomato sauce and approximately 1 tbsp of the sun-dried tomato pesto.

Shoe String Casserole

Ingredients:
4-6 peeled potatoes
1/2 heavy whipping cream
Salt and pepper to taste
1 cup cheddar cheese
1/4 cup of grated parmesan
Parsley flakes for looks
Preheat oven to 400 degrees
 Cut the potatoes in to 1/4 inch pieces them slice thinly into shoe string french fry size.
 Now put in an 8x8 or 9x13 if doubling the recipe. Now season, feel free to add more seasoning, for example, I used Lowery's seasoning salt, garlic powder, and pepper. Then add heavy whipping cream, feel free to use half and half.
 Top with cheeses and parsley, not top with greased foil so that the cheese does not stick when you take the foil off after done baking.
 Bake for 40-60 minutes depending on amount, the 8x8 is about 40 minutes but just make sure they are fork tender. Take out and enjoy!
Cook tips: I think that if you were in a hurry you could use frozen shoe string fries. Also, do not stack to many fries try to lay even and about 1/2-1 inch thick.

Chicken and Mushroom Quesadillas

I love quesadillas because they are quick to put together and you can change them up and never make the same quesadilla twice. This quesadilla was different for me because I decided to not use a prepackaged seasoning since they are so high in sodium, instead opting for low sodium dry seasonings. Check it out below!

Begin by sauteing sliced white mushrooms (can sub bellas here) and sliced onion in olive oil.

When mushrooms are cooked an onions have softened add chicken, 1tsp of chili powder, 1 tsp of ground cumin, and 1 tsp of dried oregano. Mix to even out seasonings.

When chicken is cooked fully add fresh spinach 1-2 cups

Cook until spinach is wilted. Taste and season with salt and pepper to taste. Don't over season, especially if you are serving your quesadilla with salsa, as this will add more flavor when you eat it :)

Prepare a tortilla by sprinkling cheese and adding mixture to one half of tortilla. 

Fold over and cook until browned on both sides.

Serve with side of salsa and/or sour cream. I used the Publix fire roasted black bean and corn salsa, it's really good! As always, enjoy!

Wendy's Frosty

Ingredients:
1/2 quart of chocolate milk
3 tbsp of sweeten condensed milk
4 oz of cool whip

 Add sweetened condensed milk and cool whip and whisk
 Then add milk and whisk
 Pull in the ice cream maker and churn for 10 minutes for a larger ice cream maker churn for 20 mintues.
 Let set in freezer for 15-20 minutes and Enjoy! My husband said this was even better then Wendy's!

Gold Pulled Chicken

Ingredients:
2-3 boneless skinless chicken breast (Left over chicken works great, specifically rotisserie)
1/2 bottle of Cattleman's Texas Gold BBQ sauce
Olive Oil
Cook chicken breast in a pan that is lightly coated with olive oil.
Let cool for a few minutes before you pull them.
 Pull chicken and place in skillet
 If you don't like this sauce you can use regular BBQ sauce.
 Pour over chicken.
 Toss to make sure that all the chicken is coated
 Let cook on medium-low until the sauce looks sticky and the is no runny substance in the pan. You can serve on garlic bread or we used onion buns. Enjoy!

Potato Casserole

Ingredients:
2 cups mashed potatoes

1/2 cup sour cream
Salt
Pepper
Garlic
1 small onion, sliced thin
1 small bell pepper, sliced thin
8 tablespoons (1 stick) butter
1 1/2 cups grated Cheddar
4 medium potatoes, cooked
6 slices bacon, cooked crisp

Directions:

Preheat oven to 350 degrees F.


Spread mashed potatoes evenly on bottom of casserole dish. Layer sour cream evenly over top. Sprinkle House Seasoning, to taste. Saute onion and bell pepper in butter; evenly layer over top of sour cream. Slice potatoes and layer over onions and bell peppers. Add butter. Sprinkle House seasoning. Finally top with cheese. Bake for 25 to 30 minutes. Remove from oven and crumble bacon over top.













Cook's Note: Leftover mashed potatoes work wonderfully in this recipe.


1/2 way Homemade Coleslaw

My Birthday recent come and left, and my Dad got me this amazing Cuisinart 9-cup food processor. I have been dying to use it so I decided to use it to shredded my carrots and cabbage for homemade coleslaw.

Ingredients:
1 medium head of cabbage
2 carrots
1/2 jar of Marie's coleslaw dressing
Salt and Pepper

To start use two medium peeled carrots
 Use the shredding wheel and push the carrots down until they are all shredded.
 Place carrots in bowl
 Cut the bottom off the the cabbage and wedge so that it fits through the feeder
 Now add cabbage to bowl
 This is way it is only 1/2 way homemade, coleslaw is not the same without Marie's coleslaw dressing!
 Use half to 3/4 of the jar and salt and pepper and toss. Let set in the fridge for 2 hours.
 If needed you can add more dressing at this time. Enjoy!
