Egg-in-a-Red Pepper Basket

Good Morning!!! Here continues my cooking with Mom...



Ingredients

1 Red Bell Pepper cut into 4 rings (about 1/4" thick)
4 eggs
Salt and Pepper to taste
Olive Oil Spray
Cheese (your choice)

Optional:
Bread
Tomatoes

Begin by slicing red peppers into rings.


Allow red pepper to cook for 1 minute on each side in a nonstick pan that has been lightly coated in an olive oil spray. Then crack an egg into each red pepper ring. Salt and Pepper as desired.



Flip when egg has cooked about half way. Then flip and cook an additional minute or two depending on egg preference. Then top with cheese and top with lid to melt.



Serving Suggestions:
Just plain or....

Serve on a toasted and lightly buttered piece of wheat bread.

You can also serve on a sandwich thin with light mayo, a slice of tomato, and finally topped with your egg in a red pepper basket. 


Enjoy any way you want and start your day off right!
