Stuffed Bell Peppers



Another creation with Paige as we watch all of the Harry Potter movies before Deathly Hallows Part II is released!!! Again excuse the cell phone pictures my camera was trapped in my car and there was a monsoon outside :)

Ingredients

4 Bell Peppers
1lb of Ground Chuck, Lean Ground Beef, or Ground Turkey Breast
1/2 Onion, diced
2 cups of brown rice
Minced Garlic
1/4 cup of diced green onions
Garlic Salt, to taste
Taco Seasoning, to taste
2 cups of tomato sauce
2 cups of salsa, medium
Shredded Mexican Cheese for topping
Serving Suggestion: top with banana peppers

Preheat oven to 350 degrees
Begin by browning meat with minced garlic and taco seasoning.
*While meat is browning remove the tops of the bell peppers and and remove the insides.


When meat is lightly browned add onions, green onions, and some diced green pepper left over from the tops of the bell peppers, or if you do not wish to do this buy an extra pepper to add to the stuffing.


While veggies and meat are cooking together boil your bell peppers for 2-3 minutes to soften. When meat is fully cooked add salsa, tomato sauce, and garlic salt (to taste). Allow to simmer for 2-3 minutes. 

To sample your stuffing mixture top on bread for a little appetizer :)

Stuff bell peppers fully with mixture (brown rice and meat mixture) and then top with cheese. Place in a pan that has been lightly sauced with the leftover pasta sauce (we used one with mushrooms in it!)


Cook for 15 minutes, then if cheese has not fully melted broil on low for the remaining cooking time. Top with sauce that has cooked on the bottom of the pan and with your choice of additional toppings like banana peppers :)
