Hashbrown Casserole

Ingredients:
2 lbs of peeled and wedged potatoes or a two pound bag of shredded potatoes.
1/2 cup of butter or margarine melted
1 pint of fat free sour cream
1 can of low sodium or fat free cream of chicken soup
1/2 onion, diced
2 cups of low fat cheddar cheese
Salt and Pepper to taste

Preheat oven to 350 degrees
Place wedged potatoes into food processor to be shredded.
 Place shredded potatoes into a large mixing bowl
 Add all ingredients and mix well
 In a greased 11x14 evenly spread out potatoes
 Bake for 45 minutes or until top starts to brown. Feel free to place under broiler to get the extra crunchiness.
 Scoop and enjoy as a side dish for breakfast lunch or dinner!!
