1/2 cup butter or margarine
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 cups whipping cream
2 cups milk
2 (10-ounce) blocks sharp Cheddar cheese, shredded and divided
1 (10-ounce) block extra-sharp Cheddar cheese, shredded
1 (16-ounce) package elbow macaroni, cooked
Keep in mind I was cooking for 10 people and doubled the recipe.
Start by melting your butter in a large sauce pan.
Slowly add your flour and whisk until smooth, cook and whisk constantly for 2 minutes.
Stir in salt and pepper, then slowly add your milk and heavy whipping cream whisking constantly. Let cook for 10 minutes and don't forget keep whisking.
Add cheese and stir until melted. I used 2 cups of mild cheddar and 2 cups of velvetta cheese. If you like strong cheese use mild and sharp or extra sharp cheedar. Then add cooked macaroni noodles.
Preheat oven to 350, Top with cheese and breadcrumbs. The trick to delicious bread crumbs is to sautee then in butter before putting on top. Then put in the oven and cook for 20 minutes.
