Turkey and Tomato Panini with Baked Panko Encrusted Portabella Fries
I made the portabella fries first because they needed more time to cook. I scrambled one egg and then prepared the panko crust by mixing bread crumbs, oregano, crushed red pepper, and salt. I a whole portabella into fry size pieces.
I cooked them at 350 degrees for 15 minutes, turning over once at 10 minutes.
While the mushrooms were cooking I made the panini. I started making a mayo based spread. I mixed together low fat mayo, fat free plain yogurt, parmesan cheese, and oregano. I spread this on each piece of bread. I then added tomatoes and turkey onto my multigrain bread.
I don't have a panini maker so I used some canned good to rig one :)
Finally all done!!!
